When should I use acrobatics 5e?
The main usage for acrobatics is maintaining your balance in a situation where doing so is a challenge. When you’re trying to traverse a tight precipice, a DM should call for a Dexterity (Acrobatics) check.
Can you use acrobatics for climbing?
Athletics is tied to Strength, Acrobatics is tied to Dexterity. Almost completely interchangeable. Unless it involves an extreme use of either skill, swimming, climbing and jumping involve both abilities and either one can excel at it. Look at ballerina’s leaping, dexterity is as important to swimming as is strength.

I’ve never had an issue using Acrobats to defend against a Shove/Grapple as it’s RAW, but Acrobatics can’t initiated a grapple. I’ve never been able to use Acrobatics to climb, that’s always firmly been a Athletics thing. The only time I’ve seen Acrobatics come up is with a balance check.
